For a first class vehicle, highlight "One Player" on the main menu and hold L2 + R2 + Left + Select + Start. Press X to select the option that appears.

Firestar Track

To jump directly to the hidden bonus track, highlight "One Player" on the main menu and hold L1 + R1 + Right + Square + Circle + Start. Press X to select the option that appears.

You can slow down the races by opening the Playstation's CD lid right when the camera starts to zoom in on the aircraft. This should slow down the race but don't forget to close the lid when the race is over.
